So. What happens when pretty much an entire liquor store is installed inside the local Pavilions? Well, if its extensive Champagne case includes a nice Charles Heidsieck, I bung a bottle into my shopping trolley, then have a chat with Dan the Wine Steward, all about how this crystal palace is the first of its kind in the entire chain. (Yet another instance of Orange County’s semi-secret status as an important test market for all kinds of things. Pav Mission Viejo, you’re next, by the way.)
The Newport Coast store has been the biggest wine profit center of all Vons/Pavilions—so imagine what this addition to the newly remodeled store conveniently directly opposite the Coto de Caza main gate might achieve. Or so goes the corporate hope/thinking/plan. Note to Cotoites: please hold up your side. Meanwhile, this RSM store can be proud of being first in another category—it’s already the biggest in produce and deli sales, and the cheese department is being expanded and will have its own monger.
